Ingredients
5 Silverthorn sweet potatoes
1/4 cup grassfed butter, melted
1/4 cup almond meal
himalayan salt
Directions
Wash and cut off the ends of sweet potatoes. Next, slice sweet potato in half longwise. Then proceed to cut sweet potatoes into fries or wedges about 1/2 inch thick.
Preheat oven to 425 degrees F
Once all fries are cut, transfer into a large mixing bowl and cover with warm water. Let soak for 30 minutes.
After sweet potatoes have been soaked, discard water and salt potatoes generously, mixing well. Next, pour in melted butter following the almond meal- mix well.
Lightly oil a baking pan or two with butter. Then lay out all the “fries” next to each other so that they make one layer inside the pan.
Place in oven and cook the fries until bottoms have created a golden brown color (about 30 minutes), then switch oven to low broil. Broil on low until tops of fries are golden brown, careful not to burn.
Serve with a side of freshly made mayo… add in some curry powder for an extra fun taste.
